Do you know how to make good fabes bean and clam stew? Surprise your guests with one of the star dishes of our cuisine!
It is really easy to make. Although you will need top-quality ingredients and a good pinch or two of patience to make this tasty dish.
Ingredients for 4 servings:
- 1/2 kg Asturian white beans (fabes asturianes de granja)
- 1/2 kg clams
- 1 tomato
- 1 spring onion
- 1 carrot
- 1 leek
- 1 bay leaf
- 4 cloves of garlic
- Extra virgin olive oil
- Finely chopped parsley
The night before, put the beans to soak in a bowl with plenty of water.
The next day, place the drained beans in a pot and add the leek, carrot, spring onion, 2 cloves of garlic, bay leaf and salt. Cover with water, up to two fingers above the beans, and bring to the boil. Then add some cold water to bring the temperature of the water down below boiling point. This is known as “scaring the beans” and should be done twice again while they are being cooked.
Continue cooking over a medium-low heat for about 3 hours, skimming off any surface froth if necessary and making sure the beans do not dry up. If the beans do start drying up, add small amounts of hot water, not forgetting to “scare the beans” with cold water twice again.
Chop the other two cloves of garlic and fry in a pan with a little oil without browning them. Add the peeled and diced tomato. Sauté briefly and add the clams. Cover the pan and keep on the heat until they open. Sprinkle with chopped parsley and then pour the mix over the beans.
That’s it!!! White bean and clam stew ready to go!
